While we recommend it as a pour-over, our preference is espresso for a wonderfully new experience. However, we also offer it in our shop as a refreshing cold brew.
In 1857, a French priest with a passion for coffee introduced it to Vietnam for the first time. By 1908, French colonists had begun cultivating Robusta and Liberica varieties, having found the Arabica yields less than satisfactory. Liberica proved to be more resistant to pests and disease, able to endure droughts and adapt to warmer climates and lower elevations. Despite these strengths, Liberica is now grown less frequently in Vietnam compared to Arabica and Robusta, primarily due to its lower yield, challenging cultivation, and the dangers involved in harvesting. Older Liberica trees can reach impressive heights of up to 65 feet, making them truly awe-inspiring. Altitude - 600 MASL
Processing - Ripe cherries were separated into different group size before being dried on raised beds for 25 days in the sun.
Notes - The flavor profile is rich and mellow, with a mouthfeel reminiscent of honey, accompanied by vibrant and juicy notes akin to ripe cherries. It carries a subtle sweetness, with caramelized undertones like stewed peach, all rounded out by a creamy texture, much like the smooth richness of cheesecake.
