Precision Processing: The Cold-Dry Washed Method
To preserve the delicate nuances of the Catimor variety, this lot undergoes a meticulous Washed process followed by an innovative low-temperature, low-humidity drying phase .
By controlling the environment during drying, we protect the bean from the intense tropical heat, allowing the sugars to stabilize perfectly. This results in a cleaner, more refined cup that highlights the terroir of the Central Highlands without any of the muddiness found in commercial roasts.
